SUNFLOWER - MILLET LOAF 
1 c. cooked millet
1/4 c. finely chopped green pepper
Pinch of salt
2 tsp. lemon juice
3/4 c. ground sunflower seeds
1 c. whole wheat bread crumbs
1 c. grated Parmesan cheese
1 egg
1/2 c. milk

Combine all ingredients in bowl. Bake in oiled loaf pan at 350 degrees about 1 hour. Serve hot with tomato sauce.

To cook millet: Bring to boil 2 cups water. Add 1 cup millet, stirring often until it boils. Heat on simmer, cover tightly and cook 10 minutes. Water should be absorbed, millet soft but not mushy.
