THIS IS IT MEAT LOAF | |
1/2 lb. ground pork 1/2 lb. ground veal 2 eggs, beaten 3/4 c. finely chopped onion 1 tbsp. Worcestershire sauce 1 1/2 tsp. dry mustard 1 tsp. salt 1/2 tsp. pepper 1 1/2 c. dry bread crumbs 3/4 c. tomato juice 6 strips bacon 1 (8 oz.) can tomato sauce Preheat oven to 350 degrees. Mix meats, eggs, onion, Worcestershire, mustard, salt, pepper, bread crumbs, and tomato juice together. Mix with hands, fluffing loaf rather than compressing it. You want a mixture that you can mold into a bomb-shaped loaf. Mold into loaf 8-10 inches long, 4 inches high on shallow casserole or baking dish (with a rim to hold drippings). Cover top with bacon strips, laid on in a diagonal pattern. Pour tomato sauce evenly over loaf. Bake 1 hour and 15 minutes. Bacon, which will have blackened, may be removed if desired before serving. Makes 6-8 servings. |
