2 lb. ricotta cheese
6 eggs
1 orange rind
1 lemon rind
3 tsp. vanilla
1 1/2 c. sugar
1 1/2 c. cooked rice

Beat eggs. Add in sugar, ricotta cheese, orange and lemon rind and vanilla. Mix in cooked rice. Grease pan and place at 350 degrees for 30 minutes or until top is golden brown.
