CRABMEAT CASSEROLE 
1 onion, chopped
1 rib celery
1/3 c. flour
1 c. evaporated milk
1 lb. crabmeat
1/2 lb. cheddar cheese
1 stick butter
2 egg yolks
1 tsp. salt
Pepper to taste

Saute onion and celery in butter. Blend in flour; gradually add milk, egg yolks, salt and pepper. Cook 5 minutes. Place crabmeat in mixing bowl. Pour sauce over crabmeat and blend well. Pour into well greased casserole; sprinkle with grated cheese and bake 10 to 15 minutes at 375 degrees.
