COCKTAIL MEATBALLS 
2 lb. lean ground beef
2 c. herb seasoned stuffing
2 eggs
1 clove garlic, crushed
1/2 c. evaporated milk
2 tsp. salt

SAUCE:

1/2 c. butter
1/2 c. chopped onions
2 tbsp. flour
1 can (16 oz.) tomatoes
1 c. hot water
2 c. chopped green chilies
2 cloves garlic, chopped
1 tsp. salt

Mix all meatball ingredients together and form small balls. Place on cookie sheet and bake at 375 degrees for approximately 10 minutes. Remove meatballs to deep casserole to keep warm.

To make sauce: Saute onions in butter until onions are clear. Add flour and brown a bit, then add tomatoes, mashing well. Add hot water, green chilies, garlic and salt. Simmer 10 to 15 minutes. Pour over meatballs and mix. Makes 80 to 85 meatballs. Freezes well.
