CLAM CHOWDER WITH MINCED CLAMS 
1 med. potato (peel and dice)
1 sm. onion (peel and diced)
1 can minced clams, drain and measure juice to make 3/4 c. liquid
Bacon fat (as from 2 strips bacon)
1 1/4 c. milk
1/4 c. milk - 2 tsp. flour

Melt bacon fat in saucepan and add above ingredients EXCEPT CLAMS. Bring mixture to a gentle boil. Reduce heat, cover saucepan and cook until potato is tender, 15-20 minutes. Add 1 1/4 cups milk. Stir well.

Mix 1/4 cup milk with 2 teaspoons flour until smooth. Slowly stir into clam mixture, stirring constantly, until flour is cooked. Add clams, salt and pepper and stir until hot.
