PRUNE CAKE | |
1 1/2 c. sugar 3 whole eggs 2 c. self-rising flour 1 tsp. cinnamon 1 c. cooked chopped prunes 1 c. chopped nuts 1/2 tsp. salt 1 tsp. vanilla 1 c. oil 1 c. buttermilk 1 tsp. baking soda 1 tsp. allspice Cream sugar and oil together, add eggs. Mix soda in cup of buttermilk, add cinnamon and allspice and flour. Alternate the milk and the flour mixture to the creamed oil and sugar; add the prunes, nuts, salt and vanilla. Pour into greased 9 x 13 inch pan. Bake at 350 degrees until done. (Test by inserting toothpick.) SAUCE TO POUR OVER CAKE: 1 c. sugar 1 stick butter 1/2 c. buttermilk 1 tsp. vanilla 1/2 tsp. baking soda Put sugar, butter and buttermilk and soda in a saucepan. Cook until full boil, remove from heat, add vanilla. Pour over the cake while still hot. |
