COLD PASTA SALAD 
6 or 7 cooked, diced chicken breasts
1 box of curley-q noodles (1 lb. size)
2 jars marinated artichoke hearts
1 avocado sliced
1 jar capers
1 sm. jar sliced black olives
2 tomatoes, diced
4 scallions, chopped

Cook the noodles in large pot of boiling water for 8 minutes. Rinse noodles in strainer (colander) in cold water. Place noodles in large salad bowl. Add shredded chicken, artichokes with marinade, avocado, capers, black olives, tomatoes and scallions. Toss with dressing and chill.

FRESH BASIL DRESSING:

1 c. fresh basil
2/3 c. olive oil
Juice of one lemon
1/4 c. red wine vinegar
1 clove garlic, crushed
1 tbsp. Dijon mustard
1/2 tsp. cayenne pepper
Salt to taste

Whip all ingredients in food processor.
