EGGLESS CAKE 
3 c. flour
1 tsp. baking soda
1/2 tsp. salt
2 tsp. baking powder
2 tsp. cocoa
2 tsp. cinnamon
1/2 c. lard, butter or shortening
2 c. sugar
1/2 c. raisins
1/2 c. nuts
candied or dry fruits
2 c. buttermilk

Cream sugar and lard, butter or shortening together until light and fluffy.

Sift together flour, baking powder, baking soda, salt, cinnamon, and cocoa.

Blend in dry ingredients alternately with buttermilk. Stir in nuts, raisins and fruits.

Bake in any desired pan which has been greased and floured at 350°F for about 30 minutes.

I made this cake today, used 1/2 cup brown sugar and 1 1/2 cups white sugar, left out the raisins and used dried cranberries, candied pineapple and candied green cherries. This cake looks wonderful, used a Bundt cake pan, so tasty! Thank you for this great recipe that does not use eggs!
