HONEY WHOLE WHEAT BREAD | |
4 pkgs. dry yeast 1 c. warm water 2/3 c. honey 1/2 c. shortening 1 tbsp. salt 3 1/2 c. warm water 6 c. whole wheat flour 7 c. white flour Dissolve yeast, 4 tablespoons of honey and 1 cup warm water (105 to 110 degrees); can determine if water is right if it is slightly hot to finger tips. NOTE: I let this work in a quart jar until it reaches top. Place in large mixing bowl along with rest of honey, shortening, salt, warm water and whole wheat flour and beat until smooth. (I use mixer with dough hooks.) Mix in white flour until dough is easy to handle. Lightly flour surface and knead about 10 minutes. Place in greased bowl and flip over so greased side is up. Cover and let rise in warm place. NOTE: I heat oven to 200 degrees and turn off and leave door open until it isn't too hot. Then place bread bowl in oven and let rise. Punch down after it has doubled and prepare dough for pans. Pans should have been greased well. Bake at 375 degrees for 40 to 45 minutes. Remove from pans onto wire rack to cool. Rub butter on tops to prevent hard crust. Makes 3 large loaves and two small. |
