GRANDMA'S YUM YUM CAKE 
Grandma used to send this cake overseas to my father during WWII. It keeps very well.

2 cups brown or white sugar
2 cups water
2/3 cup lard (may use shortening for modern version)
1 cup raisins
1/4 tsp. salt
1/2 tsp. nutmeg
1 tsp. cloves
2 tsp. cinnamon
4 cups all-purpose flour sifted with 1 tsp. baking powder
2 tsp. baking soda mixed with 1/3 cup coffee
1 cup chopped nuts

Boil sugar, water, lard, raisins, salt and spices for 5 minutes. Let cool, then add flour mixture and baking soda mixture. Mix thoroughly, then add nuts. Pour into greased and floured loaf pan.

Bake at 350°F for 30 to 35 minutes or until knife comes out clean.
