WILLARD SCOTT'S GRANNY FRUIT
SQUARES
 
1 1/4 c. all-purpose flour
1 tbsp. confectioners' sugar
1/2 c. (1 stick) butter, softened
1/2 tsp. salt
2 lg. eggs, beaten
1/2 c. chopped walnuts
1 tsp. vanilla extract
1 c. packed brown sugar
1 tsp. baking powder
1 c. chopped pitted dates
1/4 c. flaked coconut

Preheat oven to 350 degrees. Sift together 1 cup flour and confectioners' sugar in bowl. Mix in butter and 1/4 teaspoon salt. Press mixture into 8-inch square pan. Bake 10 minutes.

In bowl, mix eggs, rest of flour, remaining salt, walnuts, vanilla, brown sugar, baking powder, dates and coconut. Spread this second mixture on top of first and bake for 20 minutes. Cool on wire rack and cut into squares to serve. Makes 10 to 16 servings.
