ORANGE LIQUEUR | |
3 lg. navel oranges (rinds) 3 c. brandy or vodka 1 c. honey Using a floating blade peeler or sharp knife, remove orange peel from oranges but not any of the white rind. Put orange peel and brandy in a 1 quart jar. Cover and let stand 3 weeks. Remove and discard peel. Stir in honey, cover and let stand 3 or 4 days without disturbing. Liqueur will separate into a clear top layer and a cloudy bottom layer. Gently pour clear layer into a clean bottle and cork tightly. Serve in cordial glasses as an after dinner drink. Cloudy portion is good for cooking. Makes 4 cups, 3 1/2 cups for drinking, 1/2 cup for cooking. |
