SPINACH SALAD 
1-2 pkg. fresh spinach
4 slices cooked bacon, crumbled
1 sm. red onion, chopped
3 hard boiled eggs, chopped

DRESSING:

1/2 c. water
1/2 c. vinegar
1/2 tsp. salt
1 beaten egg
3/4 c. sugar

Wash spinach and tear into bite-sized pieces. Add onion and refrigerate to crisp. Combine water, vinegar, salt, beaten egg and sugar. Cook until thick. Cool. Add bacon and chopped egg to spinach. Serve with dressing.
