DIRTY RICE | |
1/2 c. cooking oil 1/2 lb. ground beef 1/2 lb. sausage, ground 1 lg. onion, chopped 1/4 tsp. red pepper 1 bell pepper, chopped 2 stalks celery, chopped 3 shallots, chopped 2 tsp. salt 1/4 tsp. thyme 1 bay leaf 2 c. canned beef or chicken broth 1 c. rice, uncooked Brown ground beef and sausage until lightly brown. Add onion, bell pepper and celery, cooking over medium heat until onions are transparent, then add salt, red pepper, thyme, bay leaf and broth. simmer for 30 minutes on low heat. (There should be about 1/2 cup liquid.) Remove bay leaf, combine freshly steamed rice with hot mixture and blend well. Add shallots after removing from heat. Cover tightly and let stand 30 minutes. Heat before serving. |
