MASTER MIX | |
5 lbs. sifted all purpose flour 3/4 c. double acting baking powder 1/2 c. sugar 2 lbs. shortening (non refrigerated) 3 tbsp. salt 1 tsp. cream of tarter 6 c. dry milk Sift flour before measuring. Stir baking powder, salt, cream of tarter, dry milk, and sugar into flour. Sift together three times into a large mixing bowl. Cut in shortening until mix is consistency of corn meal. Store in a covered container at room temperature. To measure mix, pile it lightly into a cup and level off with a spatula. Biscuits (for family) : 3 c. mix 2/3 c. milk Makes 18 (2 inch) biscuits Biscuits (for two) : 1 c. mix 1/2 c. milk Makes 6 (2 inch) biscuits Add milk (or water) to mix all at once. Stir until flour is moistened. Knead 15 strokes on lightly floured board. Roll 1/2 inch thick. Cut. Bake at 450 degrees for 10 minutes. |
