CARROT CAKE | |
1 1/2 c. oil 2 c. sugar 4 eggs 2 c. flour 3 c. grated carrots 2 tsp. baking soda 2 tsp. baking powder 1 tsp. salt 2 tsp. cinnamon 1 c. nuts Blend oil, sugar, add eggs one at a time, beat. Stir in flour and spices. Add carrots and nuts. Pour into greased 9 x 13 inch pan. Bake at 300 degrees for 50 minutes. ICING: 1 (8 oz.) pkg. cream cheese 1/2 stick butter, softened 2 tbsp. vanilla 1 box powdered sugar Chopped nuts Mix well, then spread on cooled cake. |
