CARROT CAKE 
2 c. flour
1 tsp. salt
2 tsp. cinnamon
4 eggs
2 tsp. baking soda
3 c. grated carrots
2 c. sugar
1 1/2 c. cooking oil

Mix dry ingredients. Add eggs, oil and carrots.

Bake in 3 layers at 350°F for about 30 to 35 minutes.

Carrot Icing:

1 box powdered sugar
1 pkg. cream cheese (8 oz.)
1 c. chopped nuts
1 stick butter, softened
2 tsp. vanilla
