CARROT CAKE | |
2 c. flour 2 c. sugar 2 tsp. baking soda 2 tsp. cinnamon 1/2 tsp. salt 1 c. cooking oil 3 eggs 2 c. carrots 1 c. nuts 1 small can pineapple 1 c. dates 1 1/2 tsp. vanilla Mix all dry ingredients. Add oil, eggs, vanilla, nuts, carrots, pineapple and dates. Bake in layer or tube pan at 350°F for 1 hour and 15 minutes. Frosting: 1 (8 oz.) pkg. cream cheese 1 pkg. powdered sugar 1 tsp. vanilla Mix. Spread on cake. |
