ARTICHOKE EGG AND CHEESE
CASSEROLE
 
10 beaten eggs
1 pt. low fat cottage cheese
1/2 c. Parmesan cheese
1 (6 oz.) can sliced mushrooms, drained
1 jar marinated artichoke hearts, chopped small, reserve oil
To oil add enough melted butter to equal 1/2 c.
1/2 c. flour
1/2 tsp. salt
1 tsp. baking powder

Mix first six ingredients together. Mix rest of ingredients together. Then add to first mixture. Bake at 350 degrees for 40 minutes.
