ENGLISH MUFFINS | |
3 tbsp. butter 2 1/4 tsp. salt 2 tbsp. sugar 1 c. milk, scalded, cooled 1 cake yeast or 1 pkg. dry yeast 1/4 c. lukewarm water 1 egg, beaten 4 c. flour, sifted Soften yeast in water. Mix butter, salt, and sugar. Add these and yeast, egg, and 2 cups flour to cooled milk. Then knead in remaining flour. Let rise until double in bulk. Roll 1/4 inch thick on floured board. Cut into 4-inch circles. Leave on board. Rise. Sprinkle with corn meal. Bake slowly on hot ungreased grill, about 7 minutes on each side. Makes 12. |
