SQUASH CASSEROLE 
4 eggs, beaten
1/2 c. oil
1 c. biscuit mix
1 med. onion, chopped
1 (4 oz.) can chopped green chili peppers, optional
1 clove garlic, optional
2 c. grated Cheddar cheese
4 c. chopped summer squash

Combine eggs, oil and biscuit mix. Stir in chili peppers, onion, garlic and 1/2 cheese and squash. Put in 13 x 9 inch pan. Bake at 350 degrees for 40 minutes. Sprinkle reserved cheese over the top.
