PUMPKIN CHEESECAKE | |
1 (16 oz.) pkg. pound cake mix 3 eggs 2 tbsp. butter, melted 4 tsp. pumpkin pie spice 1 (8 oz.) pkg. cream cheese 1 (14 oz.) can sweetened condensed milk 1 can pumpkin 1 tsp. cinnamon 1/2 tsp. salt 1 c. chopped nuts In small bowl, combine cake mix, 1 egg, butter and 2 teaspoons pumpkin pie spice. Beat on low until mixture is crumbly. Press into bottom of 9x13 inch pan, set aside. In large bowl, beat cream cheese until fluffy. Add condensed milk, 2 remaining eggs, pumpkin, remaining pie spice, cinnamon and salt. Mix until blended. Pour into crust; sprinkle with nuts. Bake at 350 degrees for 35-45 minutes. Cool, then refrigerate until ready to serve. Cut and serve with Cool Whip. Serves 8-12. |
