SCOTTISH OAT CAKES 
1/2 tsp. baking soda
1/2 c. boiling water
1 c. sugar
2 c. rolled oats
2 c. flour (whole wheat or rye too)
2 c. bran flakes/raisins
1 tsp. salt
1 1/4 c. butter

You can use corn flakes instead of bran flakes and wheat germ in small amount. You can add dried fruit or berries, chocolate chips.

1. Preheat oven to 350 degrees.

2. Add the baking soda to the boiling water and let stand until cool.

3. Mix all the dry ingredients in a bowl and cut in the butter. Add the baking soda and water. Work in with fork and then gently knead the dough for a few seconds.

4. Roll the dough out thin on a floured board. Cut the dough into two inch squares and transfer to a cookie sheet. Cookies may be placed close together on sheet, as they can be broken apart easily when cool. Bake for 8 to 10 minutes. Yield: 8 to 9 dozen.
