MINCEMEAT UPSIDE DOWN CAKE 
1/3 c. butter
3/4 c. sugar
2 eggs
1/2 c. milk
1 1/2 c. flour
1/4 tsp. salt
2 tsp. baking powder
1/2 c. mincemeat
1/4 c. sugar

Cream butter. Add sugar and cream well. Add 1 egg at a time, beating well each time. Put dry ingredients together. Add to first mixture alternately with milk.

Butter a shallow square or oblong baking pan. Sprinkle with sugar and line with mincemeat. Turn cake batter over mincemeat. Bake at 350 degrees about 45 minutes. Serve hot with whipped cream, or lemon or vanilla sauce. Serves 8.
