4 c. hot mashed potatoes (5)
1 (8 oz.) pkg. cream cheese
1/3 c. chopped onions, optional
1 egg
1 sm. jar diced pimento
1 tsp. salt

Mix potatoes, cream cheese, egg and salt together until creamy. Add onion and pimento. Put in ungreased casserole dish and bake at 350 degrees for 45 minutes.

Double for company. Can be made ahead of time and frozen.
