TABOULIE 
2 c. cracked wheat (Bulgar)
1 c. chopped parsley
1/4 c. chopped onion
2 tomatoes, chopped
1/4 c. lemon juice
1/4 c. olive oil
Salt & pepper to taste

Also may add: 1 or 2 cans chopped water chestnuts

Soak bulgar in 1 cup warm water for one hour. Add other ingredients and toss. Chill before serving. Serves 8. (Provides the highly touted bulk and vitamins in your diet.)
