3 tbsp. flour 1 tbsp. cornmeal 2 tbsp. buttermilk 1 egg, beaten 2 frankfurters Generous pinch of salt Generous pinch of baking soda Oil for deep frying Mix 2 tablespoons flour with cornmeal, salt and soda. Beat together buttermilk and about 1/3 of the egg, then stir into flour mixture until smooth. Cut franks in half crosswise, then roll in the rest of the flour to coat. Dip in the cornmeal batter until well coated. Fry in about 2 inches of oil for 2 or 3 minutes or until golden brown. Drain on paper towels and eat while hot. Makes 1 serving. |
