SWEET POTATO CASSEROLE | |
3 c. cooked mashed sweet potatoes 1 c. sugar 1/2 c. milk 1/3 c. butter 2 eggs 1 tsp. vanilla Dash of nutmeg Combine all above ingredients well and pour into baking dish. Top with the following. TOPPING: 1 c. coconut 1 c. chopped pecans 1 c. brown sugar 1/3 c. flour 1/3 c. melted butter Blend coconut, nuts, sugar and flour. Add melted butter and sprinkle over potatoes. Bake at 375 until brown, about 25 minutes. Serves 10- 12. |
