HOLIDAY SWEET POTATO CASSEROLE | |
4-5 c. mashed sweet potatoes 2 well beaten eggs 1 tsp. cinnamon 3/4 c. sugar 3/4 c. brown sugar 1 c. coconut (Angel Flake) 1 tsp. nutmeg TOPPING: 1 stick softened butter 1 c. chopped nuts 1/2 c. brown sugar 1 1/2 to 2 c. crushed corn flakes Mix together first 7 ingredients and put in a greased 2 1/2 quart casserole dish. Combine the topping ingredients and sprinkle over the casserole. Bake at 375 degees until brown (about 20 minutes). |
