LEMON CHESS PIE 
pre-baked pie crust
3 eggs
1 1/2 c. sugar
2 tbsp. flour
dash salt
2 tbsp. butter, melted
1 c. buttermilk (or 1 tbsp. lemon juice or vinegar + enough milk to make 1 c.)
1 to 1 1/2 tsp. lemon flavoring (flavor to taste)
powdered sugar

Beat eggs, sugar, flour and salt until completely blended. Add butter and buttermilk. Add lemon flavoring. Blend and pour into pie crust. Sprinkle with powdered sugar.

Bake at 325°F until done.
