1 beaten egg 1/2 c. buttermilk or sour milk 1/4 c. finely chopped green onions 1 tbsp. water In a small mixing bowl stir together egg, buttermilk or sour milk, green onions and water. 1/4 c. all-purpose flour 2 tbsp. sugar 1 tsp. baking powder 1/4 tsp. baking soda 1/8 tsp. salt In a medium mixing bowl combine cornmeal, flour, sugar, baking powder, baking soda and salt. Add egg mixture to dry ingredients. Stir just until moistened. oil for deep-fat frying In a heavy saucepan or deep-fat fryer heat about 2 inches melted shortening or oil to 375 degrees. Drop batter by tablespoons into hot fat. Fry a few at a time, about 2 minutes or until golden brown, turning once. Drain on paper towels. Keep warm in a 325 degree oven while frying remainder. Makes about 18. |
