VEGETABLE CASSEROLE 
1 lg. can English peas, drained
1 sm. can sliced water chestnuts, drained
1 sm. onion, chopped
2 oz. pimento, drained
1 can cream of mushroom soup
1 c. grated sharp cheese
1 c. Ritz cracker crumbs
3/4 stick butter, melted

Layer ingredients in a 9 inch square dish as listed. Top with Ritz crackers mixed with melted butter and sprinkle on top. Bake at 400 degrees for 20 minutes. Can be made ahead and frozen.
