SALMON RICE PIE
(LOHIRIISIPIIRAKKA)
 
DOUGH:

2 c. warm milk
1 pkg. dry yeast
1 tsp. salt
4-5 c. bread flour
1/2 c. butter

FILLING:

2 c. milk
3/4 c. rice
4 eggs, hard boiled
1-2 lbs. salmon

FILLING: Boil milk and rice.

Make dough. Knead well. Let rise double in size. Roll it into 2 rectangles. Spread rice which has been boiled in milk, chopped eggs and salmon over dough. Season with salt, if needed. Cover with remaining dough. Secure the ends well. Glaze with beaten egg. Bake at 350 to 400 degrees for 45-60 minutes.

VARIATIONS: Instead of salmon, use sauteed ground beef or mushrooms.
