PEACH CAKE | |
1 1/2 c. all-purpose flour 2 1/2 tsp. baking powder 1/4 tsp. ground nutmeg 1/3 c. butter 1/2 c. sugar 1/2 c. egg beaters 1 tsp. vanilla 1 tsp. grated lemon peel 1/2 c. skim milk 1 (16 oz.) can sliced peaches, well drained In small bowl combine flour, baking powder, and nutmeg; set aside. In medium bowl with mixer at medium speed, beat butter and sugar until light and fluffy. Beat in egg beaters, vanilla, and lemon peel. Alternately add flour mixture and skim milk, beating well after each addition. Spread evenly in greased 8 x 8 x 2 baking pan. Arrange 3 rows of peach slices on top of batter. TOPPING: 1 tbsp. sugar 1/8 tsp. ground cloves 1/8 tsp. ground nutmeg In small bowl stir sugar, cloves, and nutmeg; sprinkle over peaches. Bake at 375 degrees for 35-40 minutes or until toothpick comes out clean. |
