WHITE FRUIT CAKE 
1 lb. white raisins
1/2 lb. red cherries
1/2 lb. green cherries
1 lb. mixed colors pineapple
1 lb. nuts (I use about 1 lb. each pecans, walnuts and 1/2 lb. black walnuts)
1/4 c. pineapple juice
3 c. plain sifted flour
1 c. shortening
1 c. sugar
5 eggs
1/4 tsp. salt
2 tsp. baking powder
2 tbsp. vanilla

Cut fruits and nuts up coarsely. Mix with one cup of flour. Beat shortening until fluffy and creamy. Gradually add sugar and continue to beat. Add eggs one at a time, beat well after each egg. Sift remaining flour, with salt and baking powder. Add to mixture alternately in thirds with the fruit juice and vanilla. Fold in the floured fruits and nuts. Cook 3 hours on 300 degrees.
