CHEESY BACON FRITTERS 
1 c. complete pancake mix
1/2 c. water
1/2 c. finely grated sharp Cheddar cheese
3 bacon slices, cooked, drained and crumbled

Place complete pancake mix and water in bowl. Stir lightly until batter is fairly smooth. Quickly fold in cheese and bacon. Drop batter by teaspoonfuls into hot deep fat (375 degrees). Fry 2 to 2 1/2 minutes or until golden brown. Drain on absorbent paper.

Serve with maple-blended syrup and sauteed apple rings. Makes about 16 fritters. NOTE: Complete pancake mix must be used in this recipe.
