Slice eggplant thin, salt each piece and let stand 10 minutes. Meanwhile, beat eggs enough for dipping. Wrap each slice in flour, dip in well beaten egg mixture and fry in rather deep fat.
TO PREPARE FOR BAKING: Place tomato sauce or spaghetti sauce in the bottom of a baking dish. Lay layer of fried eggplant over it, then layer of tangy American cheese. Again layer tomato sauce, eggplant and cheese. Repeat layers until all eggplant is used ending with a layer of sauce. Bake in moderate oven about 1/2 hour or until cheese is entirely melted.
