2 (8 oz.) pkgs. cream cheese 3/4 c. sugar 2 eggs 1 tbsp. lemon juice 1 tsp. vanilla Vanilla wafers (1 box) 1 can fruit pie filling or fresh fruit Paper cupcake holders Beat cream cheese, sugar, eggs, lemon juice and vanilla until smooth. Place a vanilla wafer in the bottom of each cupcake holder. Fill cup 3/4 full of mixture. Bake at 375 degrees for 15 to 20 minutes until set. Cool. Add fruit topping. Refrigerate. |
