LEMON CHEESE TARTS 
2 c. sugar
1 tbsp. cornmeal
1 tbsp. flour
Pinch of salt
1/4 c. butter
1/4 c. milk
Juice & rind of 2 lemons
4 eggs

Mix sugar, cornmeal, flour and salt. Melt butter and cool. Add. Add milk, lemon juice and rind and eggs. Mix well. Pour into 16 tarts or shells, unbaked. Makes 16 tarts (about 1/4 cup each tart). Bake at 350 degrees for 30 minutes.
