SPINACH & STRAWBERRY SALAD 
1 (12 oz.) pkg. fresh spinach
1/4 lb. fresh strawberries
1 sm. red onion, sliced & separated into rings

DRESSING:

1/4 c. vegetable oil
2 tbsp. & 2 tsp. vinegar
2 tbsp. sugar
1 1/2 tsp. poppy seeds
1/2 tsp. salt
1/2 tsp. dry mustard

Wash and dry spinach leaves. Remove stems and tear into bite-size pieces. Wash and hull strawberries and cut into quarters. Combine spinach, strawberries and onion in bowl; cover and chill. Use blender or food processor or whisk to blend dressing. Cover and chill. Serve salad when thoroughly chilled with dressing.
