STRAWBERRY AND SPINACH SALAD 
2 tbsp. cider vinegar
1/3 c. corn oil
3/4 c. chopped macadamia nuts or chopped pecans
3 kiwi fruits, peeled and sliced
2 tbsp. strawberry jam
8 c. torn spinach leaves
1 c. fresh strawberries, halved

For Dressing: Combine vinegar and jam in blender or food processor. With motor running, add oil until well blended. In large bowl, combine all spinach, half of the nuts, half of the strawberries, and half of the kiwi fruit. Add dressing and toss. Spoon onto individual salad plates and top with remaining nuts, berries, and kiwi. 8 servings.
