STRAWBERRY CHIFFON HONEYDEW
WEDGES
 
1 c. Light N' Lively strawberry low-fat yogurt
1/2 c. cold water
2 tsp. unflavored gelatin
1/2 c. frozen strawberries
1 honeydew melon, cut in half and seeded

In small saucepan, bring water to a boil. Remove from heat; dissolve gelatin in water. Add yogurt; mix well. Stir in strawberries. Chill, stirring occasionally, until thickened but not set. Beat with electric mixer on low speed or wire whisk until fluffy. Spoon mixture into melon halves. Cover and chill 3 hours or until firm. To serve, cut each melon half into 4 wedges. Garnish with additional strawberries, if desired. 8 servings.

Love this recipe for Easter Brunch. Found honeydew was too big a slice (and doesn't easily stand on a buffet plate) to be easy to serve/eat. So this year I'm going to replace honeydew with Kiwi and Lemon cups. Just think how pretty and tasty the green and yellow will look on the buffet as well as a dinner plate! Think Spring.
