BROCCOLI GRAPE SALAD
1 bunch broccoli, washed & drained
1-2 c. red grapes (for color)
Few pieces crispy fried bacon
1-2 sm. green onions, chopped
Slivered almonds for top

DRESSING:

3/4 c. real mayonnaise (not Miracle Whip)
2-3 tbsp. sugar
Milk & wine vinegar

Equal amounts of milk and wine vinegar to thin out the dressing so it will stiffly pour off a spoon.

Peel broccoli stems so they can be used along with the flowerettes. Chop broccoli tops and thinly slice stems. Add grapes which have been cut in half. Add crumbled bacon and chopped onions. Mix all dressing ingredients and taste to make sure you have that sweet yet tart taste. Pour over broccoli mixture and stir. Best served after flavors have blended a few hours. Add almonds to top before serving.

I make lots of variations of this recipe. I have used green grapes or even canned mandarin oranges for red grapes; used Vadialia onions for green onions. Made it to suit Weight Watchers by eliminating bacon, using "light" mayonnaise, skim milk and "Equal" in dressing.
