RICE CHEDDAR 
3/4 c. sliced green onions and tops
2 tbsp. butter
1/4 c. diced pimentos
1 c. diced Cheddar cheese

Saute onions in butter until soft but not brown. Add rice and pimentos. Cook over low heat until rice is thoroughly heated, stirring occasionally. Stir in cheese; salt and pepper to taste and serve.
