CREAM CHEESE CUSTARD (FLAN DE
QUESO)
 
2 c. sugar
13 oz. evaporated milk
4 eggs
1 tsp. vanilla extract
16 oz. cream cheese

Preheat oven to 350 degrees. Use 1 cup sugar to caramelize a round 8x3 inch aluminum pan (without tube). Heat the sugar in the pan slowly at low heat until it turns a light golden color. Swirl the pan so that the entire bottom and sides are coated with caramel. Set aside on metal rack.

Blend 1 cup sugar, 13 oz. undiluted evaporated milk, 4 eggs and 1 teaspoon vanilla in an electric blender. Pour the mixture into the caramelized pan. Set the pan in a large shallow baking pan containing an inch of hot water. Bake for about 1 hour or until set and golden. Remove pan from water bath. Allow to cool on top of stove or other safe place. Cover it before you put it in refrigerator. Turn onto a platter when ready to serve. Serves approximately 8.
