OLIEBOLLEN (Donuts) 
6 c. flour
1 c. white raisins
1 c. dark raisins
1 c. currants
1 qt. milk
4 eggs
1 tsp. salt
2 cakes yeast

Mix yeast, 1/2 cup lukewarm water. Add 2 teaspoons sugar. Set aside.

Mix flour, raisins. Add salt. Stir in yeast. Beat eggs. Add to flour mixture. Stir well. Add milk. Let dough stand, covered, 2 hours. Stir down once. Let rise again. Stir.

Drop by tablespoon into hot oil (375 to 400 degrees). Dip spoon in milk. Dough will slide off easily.

Mix sugar and cinnamon in a bag. Put cooked donuts into bag. Shake gently to coat.
