SWEET POTATO PECAN PIE | |
2 c. cooked, mashed sweet potatoes 1/2 c. brown sugar 1/2 c. granulated sugar 1/4 tsp. salt 1/8 tsp. ginger 1/4 tsp. cinnamon 1/4 tsp. maple flavoring 4 eggs, lightly beaten 1 c. chopped pecans 1 (9") deep dish pie shell, unbaked Preheat oven to 375 degrees. In a large mixing bowl combine potatoes, sugars, salt, spices and flavoring. Add eggs; beat vigorously until combined. Stir in pecans. Pour into pie shell. Bake for 45 minutes. Reduce heat to 325 degrees and bake for an additional 10 minutes. |
