SWEET & SOUR BAKED CHICKEN 
1/4 c. butter
1/2 c. chopped onion
1/2 c. coarsely chopped green pepper
1/2 c. coarsely chopped carrots
3/4 c. ketchup
1 c. pineapple juice
2 tbsp. vinegar
1/4 c. brown sugar
1 tbsp. soy sauce
1/2 tsp. garlic salt
1/2 tsp. salt
1/4 tsp. pepper
Dash ground ginger
Dash ground red pepper
1 c. pineapple chunks (drained
3 lb. cut up chicken

Preheat oven to 400 degrees. In skillet heat butter; add onion, green pepper and carrots and cook 5 minutes, stirring.

Stir in ketchup, pineapple juice, vinegar, sugar, soy sauce, garlic, salt, pepper and ginger. Cook, stirring constantly, until mixture boils. Add pineapple chunks.

Arrange chicken pieces, skin side up in 13 x 9 x 2 pan. Pour sweet and sour sauce over all. Bake, covered, 45 minutes. Uncover and bake 30 to 40 minutes longer or until chicken tests done.

I serve with rice.
