ZUCCHINI NUT BREAD | |
2 c. sugar 3 1/2 c. flour 1 1/2 tsp. salt 1 tsp. cinnamon 1 tsp. nutmeg 3/4 tsp. baking powder 1 1/2 tsp. baking soda 1/4 tsp. ground cloves 4 whole eggs 1 c. oil 1 tsp. vanilla 2 c. grated zucchini 1 c. walnuts 1 c. raisins (optional) Beat eggs. Gradually add sugar and vanilla. Add oil; mix well. Combine dry ingredients alternately with grated zucchini. Mix all ingredients together well for about 2 minutes. Stir in nuts and raisins. Pour into 2 greased and floured loaf pans. Bake in 350 degree oven for 55 minutes or until cake tester indicates that the bread is done. |
